Hard-Boiled Eggs
This week is about what to do with hard-boiled eggs. I have a special Easter dipping sauce recipe that my mom and I came up with that resembles what my grandmother used to make on Easter for dipping sausage. It was a huge hit with my husband and even with my 5 year old son. I have to disclose that my 5 year old is not picky at all though. Some people compare it to the filling for deviled eggs, but somehow it seems much different to me. Chef salad is another way to use the eggs, or in egg salad. Of course hard-boiled eggs are also great as is with a little salt.

Eggplant Week
This week is eggplant week. Eggplant recipes that I cook are Baba Ganoush and Eggplant Rolls. I've made the eggplant rolls recipe from a blog called Skinny Taste.
It is gluten-free and it was great!

About this week's menu
My husband managed to find some gluten-free pita! Yay! We'll be having that with our lamb burgers. Everything in this meal is great with yogurt sauce which is why I usually triple the recipe. Everyone in my family loves it. For the cobb salad, I actually bought some Live G-free gluten-free nuggets from Aldi's to use as the breaded chicken in case I don't have time to make it from scratch. I'm trying to keep Monday and Thursday the easiest days due to soccer practice! Have a great week. Hope the snow thaws out for all of you northerners!

About This Week's Menu
This Sunday is Superbowl Sunday! I'm looking for some fun finger foods for my family. My son suggested spider meatballs. I got some guacamole and chips and for veggies I'll cut up some fresh broccoli and cauliflower and serve them with dip. Hopefully it will be an exciting game. I was craving fajitas last week so it's on the menu for this week. For Tuesday's Fajitas I'm going to cook the meat in the crock pot. My family loves the taste of the meat when it's cooked in the crock pot and makes meal preparation much easier when the meat is warm, cooked and flavored when I walk in the door.

How did everyone do during the holidays? Our preemptive planning for it helped to lessen the damage of all of the food temptation during the holidays, but it's time to get back on track. I have a lot of resolutions this year having to do with everything from finances, to doing more yoga, to volunteering more often. So far I haven't done any of it and I seem to be falling off of even what I was doing last year but hopefully that will improve this week. There's always a chance to improve!

About This Week's Menu
This week finger foods have been requested by my son for Sunday's meal. I'm planning on making chicken nuggets. On Monday we're having Chicken Cacciatore in the crockpot or as my husband calls it when I make it - Chicken Caccia-Lori. We have salmon on the menu again. This is surprisingly one of my 5 year old's favorite meals. I don't think I liked fish until my 20's and I still don't like it as much as he does so it amazes me. I'm planning on preparing the fries ahead of time and putting them in plastic bag so they can quickly be thrown in the oven after work. The rest of the meals are pretty easy. We're keeping them fairly simple because it's easier to track calories and to keep the calorie count down.

Avoiding the Holiday Bulge

The Holidays are here and it's time to eat some good food, but is there a way to prevent the extra pounds that often come with the holiday season? This year my husband and I have been trying to prepare for the holidays by tracking our weight and trying to get a handle on it before the holidays. How are we doing it? Well, by recording our weight everyday and there are all sorts of cools ways to do it. I've been using a mobile app for my phone called Happy Scale. It's free and pretty easy to use. There are plenty of other cool weight loss apps to explore if you want to do the research as well. My husband has a more elaborate system where he tries to keep his weight between an upper curve and lower curve with all sorts of excel spreadsheets, but it's similar in that we just weigh ourselves everyday. When we do that we can quickly see patterns that are causing things to go in the wrong direction and we can correct them by taking extra long walks or avoiding something sugary.

The other thing that we've been doing is not avoiding fat. It seems unintuitive because we've been taught to eat a low fat diet for so many years, but a big trend now is to not be afraid of fat. The theory is that the higher fat foods actually help you to keep your weight down because most people eat less with a high fat diet! I'm not ready to eat lots of fatty meats (fyi there are plenty of people who believe in this theory who are), but I am ready to give things like coconut oil and coconut milk and high fat vegetables like avocados more of a chance. I've even started drinking 2% milk instead of skim or 1% and the added benefit is that it tastes so good!

So Happy Thanksgiving! Enjoy your families and friends and your food, but if you're afraid of gaining weight, try tracking it!

About this week's menu:

This week we have fennel on the menu. I've explored fennel before and it has a very nice flavor just as a vegetable on it's own, but I think it adds kind of a sausage flavor to meat too. This week we're using fennel in a chicken recipe and as a vegetable, just chopped and softened by sauteing over the stove in olive oil. Also the Turkey and Squash Pasta recipe that I got from my mother in law has fennel seed in it. The fennel adds so much flavor. Also this week we're having Sloppy Joe's with this yummy home-made recipe. We're also going to have a crock pot meal for Tuesday night. I'm hoping to do the preparation the night before and just pouring the contents of a ziplock bag into the crock pot on Tuesday morning. Hope you all have a great week.
