New Year's Resolutions

This week's gluten-free menu :

Sunday : Chicken Fingers, Carrot Sticks, Brussels Sprouts
Monday : Chicken Cacciatore - Crock Pot Meal
Tuesday : Hamburgers, Baked Seasoned Fries, and Green Salad
Wednesday : Salmon, Broccoli, Rice
Thursday : Pork Tenderloin, Baked Apples, Finger Potatoes
Friday : Chef Salad

How did everyone do during the holidays? Our preemptive planning for it helped to lessen the damage of all of the food temptation during the holidays, but it's time to get back on track. I have a lot of resolutions this year having to do with everything from finances, to doing more yoga, to volunteering more often. So far I haven't done any of it and I seem to be falling off of even what I was doing last year but hopefully that will improve this week. There's always a chance to improve!

About This Week's Menu
This week finger foods have been requested by my son for Sunday's meal. I'm planning on making chicken nuggets. On Monday we're having Chicken Cacciatore in the crockpot or as my husband calls it when I make it - Chicken Caccia-Lori. We have salmon on the menu again. This is surprisingly one of my 5 year old's favorite meals. I don't think I liked fish until my 20's and I still don't like it as much as he does so it amazes me. I'm planning on preparing the fries ahead of time and putting them in plastic bag so they can quickly be thrown in the oven after work. The rest of the meals are pretty easy. We're keeping them fairly simple because it's easier to track calories and to keep the calorie count down.
