Kid-friendly, home-made, and gluten-free chicken nuggets.

fresh parsley

corn meal
1⁄2 c
gluten-free all purpose flour
1⁄4 t
red pepper flakes (optional)
1⁄4 c
parmesean cheese
1⁄4 c
canola oil
1 lb
chicken breast (cut into nugget size pieces )


Preheat the oven to 425°.In a food processor blend chopped garlic, parsley, corn meal, flour, red pepper flakes if using and parmesan cheese. Place the mixture on a plate.

In a separate bowl whisk 2 eggs.

Dip the chicken pieces in the egg and cover them with the mixture.

Place on a baking sheet with a non-stick cooking sheet or parchment paper.  Drizzle the top of the nuggets with the olive oil and cook for 10 minutes.  Then take them out of the oven, and turn them over.  Drizzle the other side with olive oil if needed (sometimes the oil drips to the other side) and cook for 10 minutes on the other side.

Serve with honey mustard sauce or barbecue sauce.
