Gluten-free Fajitas imported from Recipe Import
Ingredients
2 T
olive oil 1⁄2
onion, sliced thinly 2
boneless, skinless chicken breasts, cut into thin strips 1⁄2
bell pepper, cut into strips (green! ) 1⁄4 c
chicken broth OR water 1⁄2 t
ground cumin 1⁄2 t
paprika 1⁄4 t
cayenne 1⁄2 t
garlic powder 1⁄2 t
dried oregano, crumbled 1⁄2 t
dried thyme, crumbledInstructions
Heat oil in skillet and saute onion until soft. Add the meat spices and then add bell pepper strips. Then add broth and bring to a boil. Add in chicken strips, then reduce heat to simmer and simmer an additional 5 minutes or until cooked through.
Serve on corn tortillas with spanish rice and a heated can of fat-free refried beans. Guacamole and salsa can be served with this meal as well.
