Sunday - Lamb Burgers, Baba Ganoush and Gluten-free pitas, Cucumber and Tomato Salad, Yogurt Sauce
Monday - GF Chicken Apples Sausage, Broccoli, and Rice
Tuesday - Sweet Potato Shepherd's Pie
Wednesday- Pork Chops with Mushrooms, Cauliflower, Crispy Corn Tortillas
Thursday - Cobb Salad, GF Crackers
Friday - Chicken Marsala, Wild Rice, Spinach

Eggplant Week
This week is eggplant week. Eggplant recipes that I cook are Baba Ganoush and Eggplant Rolls. I've made the eggplant rolls recipe from a blog called Skinny Taste.
It is gluten-free and it was great!

About this week's menu
My husband managed to find some gluten-free pita! Yay! We'll be having that with our lamb burgers. Everything in this meal is great with yogurt sauce which is why I usually triple the recipe. Everyone in my family loves it. For the cobb salad, I actually bought some Live G-free gluten-free nuggets from Aldi's to use as the breaded chicken in case I don't have time to make it from scratch. I'm trying to keep Monday and Thursday the easiest days due to soccer practice! Have a great week. Hope the snow thaws out for all of you northerners!
