Salad Week

This week's gluten-free menu:
Sunday - Roast Chicken, Rice Pilaf, Cooked Spinach
Monday - Chicken and Mango Salad, Tortilla Crisps
Tuesday - Lentil Soup, Gluten-Free Corn Muffins
Wednesday - Steak and Pear Salad, GF Crackers
Thursday - Spinach Frittata
Friday - Fish Tacos, Mango Margaritas



This week is salad week in the Gluten Free Menu Swap and Angela's Kitchen is hosting this week. I'm looking forward to seeing the other menus for salad ideas.  Mostly I'm wondering what gluten-free sides are served with salad. I struggle a lot with sides and often end up choosing rice. I'd like to mix this up a little more. This week's menu is looking pretty healthy with a lot of salad, a fish meal, and a couple of meatless meals. On Sunday we're starting off with a Roast Chicken. Leftovers from the chicken can be used in Monday's Mango Salad. On Tuesday we're having Lentil Soup and Corn Muffins. Wednesday we're having Steak Salad and Thursday we're having Spinach Frittatas. On Friday we're mixing our fish and fun in honor of my first date with my husband with Fish Tacos and Mango Margaritas. Yum!
