Even if you miss a few ingredients this recipe is flavorful and satisfying.
Saute onion, garlic, carrots, and celery in olive oil. Add chicken broth. Then add lentils, oregano, bay leaf, basil and tomato. Boil until lentils are tender, about 30 minutes. Add spinach and mix in and lemon juice. Salt and pepper to taste and serve.
