Chocolate Week

This week's gluten-free menu:

Sunday - Cincinnati Chili , Green Salad
Monday - Chicken Marsala, Broccoli, Rice
Tuesday - Lentil Soup, Corn Muffins
Wednesday - Chicken With Mole Sauce , Rice, Jicama
Thursday - Baked Salmon, Cooked Spinach, Rice Pilaf
Friday - Tacos

This week is chocolate week. Everyone loves chocolate. Most often we think of it as something to put into desserts but I've chosen two entrees that use chocolate and am including them in this week's menu.

The first is Cincinnati Chili. This chili has just a bit of baker's chocolate in it. If you've never had Cincinnati Chili I suggest you try it. I lived in Cincinnati for a few years and discovered this gem. It took me a while to warm up to it but pretty soon I found myself at Skyline Chili eating it at 3 in the morning like everyone else. My husband who is from Texas loves Texas Chili, but has made room in his heart (and stomach) for this chili as well. Cincinnati Chili is usually served over spaghetti with garnishes. At Glutenfreeweek we of course will serve it over gluten-free spaghetti. In the chili restaurants in Cincinnati this is how it's served :

3-way : chili, spaghetti, and cheese
4-way : a 3-Way plus onions or beans
5-way : spaghetti, chili, onions, beans and cheese

The other dish that uses chocolate this week is Chicken Mole. Apparently there are several mole sauces in Mexican cooking. The most common mole in American cooking is guacamole. The savory chocolate mole that most people think of as mole is actually called Mole Poblano. I'm making an easy version because some of the recipes I've seen would take all day. This can be a truly gourmet endeavor but I'm going to keep it simple.
