Ingredients

olive oil 1
onion (chopped) 3 clv
garlic (chopped) 2 T
chili powder 1 t
ground cumin 1⁄2 t
ground cinnamon 1 cn
diced tomatoes (drained) 1
bell pepper (chopped) 2
chipotle peppers (roughly chopped) 1 1⁄4 c
chicken broth 2 T
peanut butter 1 1⁄2 oz
baker's chocolate (chopped) 1
(5-pound) chicken (split into 8 pieces) 1⁄4 c
orange juiceInstructions
Preheat oven to 350 degrees.
Over medium heat, add olive oil and onion and saute until tender. Add garlic, chili powder, cumin, and cinnamon and cook for a few minutes. Add tomatoes, peppers, chipotles, chicken broth, peanut butter, orange juice, and chocolate. Simmer for 10 minutes. Put the sauce in a blender or a food processor and blend the mixture until it's smooth.
Brown the chicken on both sides for a few minutes in a pan over medium-high heat. Then place the chicken in a casserole dish covered with mole sauce. Bake for 1 hour.
