This week's gluten-free menu:

Sunday - Chicken Salad, Fruit Salad
Monday - Spaghetti and Meatballs, Green Salad
Tuesday - Spinach Frittata , Broccoli, Crispy Corn Tortillas
Wednesday - Bean Burritos, Spanish Rice
Thursday - Chicken and Rice Soup , Apples and Cheese
Friday - Taco Night

School's out! Summer is here! Time for that road trip. Pack up the car. Fill up the cooler. But with what? This week we are talking about some ideas for what to bring in the car. Some fruit and cut vegetables are easy foods for the car, but make sure you bring some napkins and set up a trash system for the car. I'm going to tie a couple of shopping bags to the back of each seat. Cutie oranges and apples make good car snacks. Also cut carrots or mini carrots and cut bell peppers work well. Gluten-Free Pretzels, corn chips, Laurabars, Kind Bars and Think Thin bars work well for car snacks as well. Making muffins to pack in the car is a great way to make breakfast quick so you can get on the road while there's daylight. My favorite are Gluten-Free Banana Muffins. Making sandwiches with gluten-free bread is something that we do as well. Peanut butter and jelly sandwiches usually hold up well in the car.
