Leeks Week

This week's Gluten Free Menu:

Sunday - Roasted Chicken, Roasted Leeks, and Lime Cilantro Rice
Monday - Chicken Pho
Tuesday - Leek Stuffed Salmon, Leek Mashed Potatoes, Green Beans
Wednesday - GF Apple Sausage, GF Pasta, Broccoli
Thursday -  Potato Leek Soup , Cold Cuts, and GF Crackers
Friday - Black Bean Enchiladas

This week the theme is leeks. I just recently started experimenting with them and have chosen three dishes that use leeks: Roasted Leeks,  Leek Stuffed Salmon, and Potato Leek Soup.  If there is anyone who doesn't know how to clean them you may have to watch this video like I had to : Cleaning Leeks Video.  I cut them and let them soak in a bowl to get the dirt out of the insides.  They were really no hassle to clean this way.  Now that we understand how to clean leeks, let's start the week! 

On Sunday we're having Roasted Chicken, Roasted Leeks and Lime Cilantro Rice.  I love this lime rice.  I've had rice like this at the restaurant Free Birds where they make the rice for burritos and I had to figure out that recipe.  It turned out to be really easy and I think it will go well with Sunday's meal.  On Monday we are having Chicken Pho.  It didn't occur to me until recently that I should take advantage of the fact that rice noodles that you get in Vietnamese restaurants are gluten-free!  Yay, we can still have Pho!  On Tuesday we are having Leek Stuffed Salmon.  It looks really good and I like to get fish or seafood into the menu at least once a week.  On Wednesday  we're having GF Apple Chicken Sausage, GF Elbow Pasta and Broccoli.  This is a kid-friendly meal that's easy on Mom.  On Thursday more leeks - Potato Leek Soup with Cold Cuts and GF Crackers and maybe some cheese and apples too. Friday is a meatless meal but I'm pretty sure it will go over well - Black Bean Enchiladas.

Heather at Celiac Family has several Leeks recipes on her menu this week :  Vegan Potato Leek Soup, Roasted New Potatoes with Leeks and Herbs , and Melted Leek and Red Pepper Quiche.
She also has Spaghetti Carbonara, Hamburgers, and Pork Chops and Quinoa with Broccoli and Mushrooms on the menu.

Mom’s Plans: Gluten-Free, Dairy-Free Menu

Melissa  at Mom's Plan has a busy week and is taking advantage of meal's that she has frozen to get her through the busy week.  Her freezer meals include Vegetable Beef Soup, One Pot Stuffed Pepper Soup, and Meatball Minestrone Soup.   She also is having Pork, Green Beans and Potatoes and One Pan Baked Salmon and Vegetables.  It all sounds very efficient as well as delicious!

Elizabeth at the Girl Who Couldn't Eat Anything is getting organized after a weekend away. She is planning Gluten-free Pancakes for dinner, Spaghetti and (maybe) Meatballs, Shrimp Scampi over Gluten-free Pasta, and Vegan Nicoise Salad.
