Ingredients

1  
salmon fillet (1 1/2 pounds)
2  
leeks (medium, halved and sliced)
1  
lemon or lime (zested & juiced)
2 T
olive oil (divided)
1⁄4 t
salt
   
Ground pepper

Instructions

Preheat oven to 350.

Prepare the Leeks
Halve and slice the leeks and then soak them to wash.  Rinse them in a colander.  Saute them in 1 tablespoon of olive oil on medium heat for about 20 minutes or until slightly browned.

Prepare the Salmon
Meanwhile while the leeks are cooking, combine in a small bowl, lemon or lime zest and juice, salt, and 1 tablespoon olive oil.  Make a slit in the salmon still leaving one side attached and open it.  Brush the juice and olive oil mixture onto both the inside and the top of the fish.  Then pepper all surfaces of the fish as well.

Finish Preparation
Add the leeks in between the slit that was made in the salmon and close the salmon so that the leeks are sandwiched in the middle. 

Bake
Bake the salmon on a non-stick surface (parchment paper or a silpat) for 15 minutes and serve.
