This week's Gluten Free Menu:
Sunday - Fajita Bowls
Monday - Chicken and Bok Choi Stir Fry
Tuesday - Chicken and Black Bean Tostadas
Wednesday - Salmon, Broccoli and Cranberry Sauce
Thursday - Red Beans and Rice
Friday - Chicken Tikka Masala and Dal
This week's menu includes a lot of beans including black beans in the fajita bowls and tostadas, red kidney beans in the red beans and rice, and lentils in dal. In preparation for thanksgiving I will practice my cranberry sauce and create a salmon that will go with that. I think if I sweeten the salmon with some maple syrup and gluten-free soy sauce it might go with the cranberry sauce? I might have to experiment. Indian food is almost all gluten-free (except for nan), so we will have Chicken Tikka Masala and Dal. Those dishes are so flavorful so I can't wait for that meal. Stayed tuned for more recipes and pictures. I will post them throughout the week.

Some recipes can be found here. I have called my mom several times to sort out the stuffing recipe and I have made the cranberry sauce. This cranberry sauce recipe is very easy and is my favorite as well.
