Description
A homemade version of hamburger helper that even sneaks in some veggies. Made with gluten-free elbow pasta.
Ingredients

carrots (large) 1
onion (medium) 1 lb
ground meat ( beef or turkey) 1⁄2 t
kosher salt 1⁄2 t
freshly-ground black pepper 8 oz
gluten-free elbow macaroni 3 1⁄2 c
water, divided 1⁄4 c
soy sauce 1 T
cornstarch 1 c
plain yogurt 2 clv
garlicInstructions
Place carrots and onion in a food processor, fitted with a metal blade. Pulse until vegetables are finely chopped. Set aside.
Brown ground beef in a large (12-inch) skillet over medium-high heat. Add carrots, onions, garlic, salt and pepper. Cook, stirring occasionally until vegetables soften.
Cook pasta according to the package or about 7-9 minutes. Then drain the water.
Dissolve the cornstarch in 1/4 cup of water. Add to the ground meat mixture. Add the soy sauce and yogurt.
Cook another few minutes until mixture thickens.
In a large bowl combine the pasta and meat mixture. Serve warm.
