Description

These Banana Muffins are moist and delicious. You'd never know that they're gluten-free unless someone told you.

Ingredients

1 1⁄2 c
gluten-free all-purpose baking flour
1 t
baking soda
1 t
baking powder
1⁄4 t
salt
2  
eggs
2  
mashed ripe bananas
1⁄2 c
sugar
1⁄2 c
unsweetened applesauce
1⁄3 c
canola oil
1 t
vanilla extract

Instructions

Preheat oven to 350 degrees.

In a large bowl combine the eggs, applesauce, canola oil, mashed bananas and vanilla extract. Mix in the sugar. In a separate bowl combine the flour, baking soda, baking powder, and salt. Slowly mix in the dry ingredients. Mix in walnuts if desired.

Fill muffins pans with batter and cook until the tops begin to brown about 25 minutes.
