Description
A weeknight version of Chicken Kebabs that is broiled in the oven.
Ingredients
1 lb
chicken breast (cut into cubes) 1 pk
mushrooms 1
yellow onion (cut into squares) 2
green pepper (cut into squares) 2 T
olive oil 1 t
oregano 1 t
basilInstructions
1) If using wooden skewers soak them in water for 30 minutes.
2) Prepare the marinade. Cut chicken chunks into 1 to 1 1/2 inch cubes. Add chunks of chicken in a large zipper lock bag and add olive oil, basil, oregano, salt and pepper. Marinade in the refrigerator for 20-30 minutes.
3) Preheat the oven to broil.
4) Prepare the skewers. Arrange the onion and green pepper squares, mushrooms, and chicken cubes on the skewers. Place them on a cookie sheet that is covered with a silpat.
5) Place the baking sheet in the oven and broil for 5-10 minutes. Turn and bake a few minutes on each side.
Notes
Serve with rice and Greek Salad.
