Ingredients

onion (chopped) 2 clv
garlic (minced) 1⁄4 c
olive oil 2
carrots (diced) 2
celery stalks (chopped) 1 t
dried oregano 1
bay leaf 1 t
dried basil 1
tomato 2 c
dried lentils 1 pk
chicken broth (32 oz) 1⁄2 c
spinach (rinsed and thinly sliced ) 1⁄4 c
lemon juiceInstructions
Saute onion, garlic, carrots, and celery in olive oil. Add chicken broth. Then add lentils, oregano, bay leaf, basil and tomato. Boil until lentils are tender, about 30 minutes. Add spinach and mix in and lemon juice. Salt and pepper to taste and serve.
