Sunday - Chicken Pho
Monday - Corned Beef and Cabbage, New Potatoes
Tuesday - Chicken Kebabs, Greek Salad, Rice
Wednesday - Potato and Leek Soup , Farm Salad
Thursday -Chef Salad, GF Crackers
Friday - Fish and Chips, Brussels Sprouts

I have declared this week Irish week at Glutenfreeweek in honor of St. Patrick's Day. Am hoping this week brings some of that Irish Luck. Couldn't we all use it? So let's get out some of that green food coloring and color our drinks green while we enjoy some Irish meals along with some easy weeknight favorites.

Funny that Potato Week was last week because Irish Week and Potato Week seem so intertwined. This week we have a few Irish meals planned. For St. Patrick's Day we're having a classic - Corned Beef and Cabbage. Wednesday is a very tasty Potato Leek Soup, and Friday is Fish and Chips.

I'm making Chicken Pho on Sunday. I've changed the recipe a bit this time. I'm adding garlic, cardamon and fish sauce to the recipe to increase the flavor while still trying to keep it easy. Tuesday night we're having Chicken Kebabs. My son has recently requested this one. He insists on keeping the meat on the stick and I think that is most of the fun of it for him. It's a really quick and simple recipe too. On Thursday I'm planning a light meal with Chef Salad and some gluten-free crackers. That's it for the week. Luck of the Irish to you!
