This week's Gluten Free Menu:
Sunday - Chicken Marsala, Rice Pilaf, and Broccoli
Monday - Chicken and Rice Soup and Farm Salad
Tuesday - Hamburger Patties, Potato Crisps, and Steamed Veggies
Wednesday - Pork Chops with Mushrooms
Thursday - Hummus and Veggie Wrap
Friday - Pizza and Green Salad

This week Glutenfreeweek.com is participating in the  the gluten-free menu swap, and the inspirational ingredient is mushrooms.  The first thing I thought of when I saw mushrooms was Chicken Marsala. I used  a really good recipe inspired by Tyler Florence.  It was low-fat and delicious.  My parents were passing through town and we all got to enjoy this yummy meal.  Chicken soup is also on the menu for this week and a farm salad that was inspired by my favorite pizza restaurant in Los Angeles that serves gluten-free pizza, Fresh Brothers.  The best thing about the farm salad is that it has fresh peas and it also has fresh mushrooms.  I used the rice pilaf from Sunday night for the soup so there was no need to make more rice.    Pork chops with Mushrooms was a favorite meal of mine growing up, but it gets a bit more complicated as a gluten-free meal.  My mom used Campbell's cream of mushroom soup, which is not gluten-free.  I have found and used gluten-free mushroom soup at Whole Foods, but more often I make my own sauce for this dish.  Often I try to make the Friday meal a bit more festive and this week Pizza is on the menu.  Lately I have been buying the gluten-free pizza dough that I have found at my local Safeway store, but I also enjoy making my own crust when I have the energy and the time.  Hope you have a great gluten-free week!
