Sweet Potato Inspired Week

This week's gluten-free menu :
Sunday - Fajitas, Spanish Rice
Monday -  Chicken, Green Beans, and Cranberry and Sweet Potato Bake
Tuesday - Chef Salad and Tomato Soup
Wednesday - Spaghetti and Meatballs and Broccoli
Thursday - Beef and Sweet Potato Stir Fry
Friday - Turkey Burgers and Sweet Potato Wedges, and Green Salad

This week is Sweet Potato Inspired Week and Glutenfreeweek is also hosting the gluten-free menu swap for the first time.    We're starting the week off with the Fajitas and Spanish Rice.  This meal is probably the most time consuming one to make, especially if you make guacamole and all the fixins  so I'm leaving this one as my Sunday meal.   My family loves this meal and it is always a bit of a celebration.  On Monday we're having a simple pan-fried chicken breast recipe with poultry seasoning, salt, and pepper and the Cranberry and Sweet Potato Bake.  I've tried this one and it is yummy. It seems special enough for the holidays and maybe a bit better for you that most holiday sweet potato recipes. Tuesday will be a simple night with Chef Salad and Tomato Soup.  By  request we're having Spaghetti and Meatballs on Wednesday.  Thursday is a Beef and Sweet Potato Stir Fry.  I've made this one before as well and really liked it.  Friday is a burger night and these sweet potato wedges are a staple in our house.

Mom’s Plans: Gluten-Free, Dairy-Free Menu
Melissa has a few soups on her menu this week which sound good to me since the weather has been cold and icy where I am.  She has a Hamburger Vegetable Soup, Chicken & Spinach Soup with Fresh Pesto, and a Leek, Potato & Spinach Soup.  She also has two squash recipes : Roasted Turnips and Butternut Squash Fries and Stuffed Acorn Squash. I also have some squash around the house that needs a use so I will have to give those recipes a serious look.

Celiac Family: Gluten-Free
This week Heather's family is having  baked sweet potatoes and Sweet Potato Fries.  She has shared her Sweet Potato Casserole recipe which would be great for entertaining during the holidays.  She has also shared recipes for Chicken Chili, Baked Chicken Nuggets, Rainbow Apple Salad, and Parmesan Tilapia.

The Peaceful Mom : Gluten-Free
Kendra has Sweet Potato Fries on her menu and has shared her method and recipe.  She also has a Ranch Chicken Casserole, Crock Pot Chili, a Lasagna Bake,  and GF Grilled Cheese and Tomato Cucumber Salad on the menu.  That lasagna bake looks easy and yummy! I will have to try it.

The Girl Who Couldn’t Eat Anything: eating without Gluten, Dairy, Peanuts, Oats, or Meat
Elisabeth shared recipes for Sweet Potato Fries and Vegan Sweet Potato Casserole. This casserole recipe looks so good. She also has Egg Salad, Sweet Potato Soup, and Tuna Apple Salad. Lot of great ideas.


GF Detroit Metro : Gluten-Free
Amanda has joined the round up this week and has made a Sweet Potato Pie with some of the dough she had left over from Thanksgiving. She also has Chicken Pot Pie, Mexican Chili, and Shepherd's Pie on the menu.

Gluten-Free Food Banks

There is one more thing that I wanted to mention this week -  a site called Pierce's Pantry.  Their mission is to fight hunger and help people get the gluten-free food they need.  Located in Boston, they are filling a big gap as the food that is in the food banks often isn't gluten-free.  Here is a list that I found on Pierce's Pantry 's website of different food banks distributing gluten-free food in the United States.

I contacted Tracy at Pierce's Pantry and asked if there was anything that we can do to help her this holiday season.  It turned out that there is a family in deep need that does need help.  This particular family is in need of gluten-free food and snacks and has children ages 9, 7, and 6. If there is anything you can do please send the help to Pierce's Pantry.  If you would like to donate to this cause here is a link to donate to Pierce's Pantry.  Alternatively if you have relationships with any gluten-free food companies that would be willing to donate please send the food her way.  After speaking to Tracy I am amazed at what a difference she and her family have made.  People and even hospitals really rely on their help.  What a great cause!
