Sunday - Sweet Potato Shepherd's Pie
Monday - Cobb Salad
Tuesday - Crock Pot Chicken and Tortilla Soup
Wednesday - Baked Salmon, Asparagus, Brown Rice
Thursday - Chicken Apples Sausage, Steamed Broccoli, Corn Muffins
Friday - Sloppy Joe's, Green Salad

I've been using the crock pot a lot lately. It seems to really be helping to keep the week going smoothly during the week. The other great part of it is cleanup. There is only one pot to clean! I'm looking for new ways to use the crock pot. I've been clued into Stephanie O'Dea's gluten-free blog :

It's all about using the Crock Pot for everyday of the week. They crock pot is apparently the only way she knows how to cook so she has a recipe for everything.
I haven't tried her recipes yet but I'm looking forward to exploring them.

Lately I've also been looking at 5dollardinners.com. They have a page of slow cooker recipes that I've been trying. Last week I tried ... and my husband really like it. This week I'm trying crock pot chicken and tortilla soup. I really like the idea of storing the ingredients in a bag the night before to use the next day or in the freezer. It is so easy to use when it's needed.

About this week's menu:

Last week's crock pot meal from $5 Dollar Dinner Plan worked so well last week that I'm trying a different one this week. Tuesday is usually my crock pot meal night because I want to cook the food at the beginning of the week while it's fresh and it gives us a lot to use throughout the week for lunch or leftovers on nights that we're too tired or busy to follow the meal plan. I'm trying to get fish back on the menu so we're having Salmon on Wednesday. On Friday we're having a freezer meal - Sloppy Joes. I make this recipe last week and it was great!
