Fajita Bowls. All the good fajita stuff in a bowl.
1. Cook brown or white rice according to the package. I like to cook mine in chicken broth.
2, Add 1 tablespoon of olive oil and mix in shredded chicken, paprika, cumin, garlic and lime juice. Remove and wipe pan.
3. Add another tablespoon of olive oil and saute the onion, red pepper and green pepper.
4. Add the chicken back into the pot until heated.
5. For each bowl add rice, then chicken and peppers mixture, and then
add freshly dice tomato and avocado or salsa and guacamole.6. Garnish with chopped cilantro.
Weeknight tip : To make things faster buy frozen rice in the freezer section, particularly if you want brown rice because it takes longer to cook.
