Simple gluten-free pork chops and mushroom recipe. This was a family favorite that I didn't want my gluten-free family to miss out on.
Wash, pat dry and season chops with salt and pepper. Add 1 tablespoon of the oil and brown chops about 4 minutes on each side. Move to a plate when finished.
Add remaining oil to the pan and cook the onion, mushrooms, and rosemary until browned and tender. Return the chops to the pan, add the chicken broth and simmer. Cook covered for 30 minutes until the pork is tender.
