Ingredients

olive oil
2 clv
garlic (minced)
1  
green pepper (diced)
1⁄2  
red onion (finely chopped)
1  
fresh baby spinach (bag)
8  
eggs
1 T
fresh basil
5 oz
feta cheese
   
salt
   
fresh ground pepper

Instructions

Preheat the oven to broil. In a bowl mix beat 8 eggs. Add basil, salt, and pepper. In an oven-proof pan, sauté the garlic in the olive oil over medium high.   Sauté the onion and the green pepper until tender.  Next cook the spinach until soft.  Pour the egg mixture over the vegetables and cook for 8 minutes.   Once the egg starts to set, sprinkle feta cheese on top and broil until brown for a few minutes watching closely. Carefully remove from the oven with an oven mitt and serve.
