Simple bok choy stir fry.
1. Wash the baby bok choy and drain. Separate the stalks and leaves.
2. Cook rice according to package.
3. Heat olive oil on high and add garlic, carrots, onion, and soy sauce. Cook until carrots are tender. Cook chicken for 5-8 minutes and then add baby bok choy. Cook until tender.
Serve over rice.
Tofu can be used as the protein instead of chicken if you prefer.
