Making granola bars sounds intimidating but I was surprised by how easy these were to make. The brown rice syrup is the only ingredient that I had to go out of my way to find and I found it at sprouts. The brown rice syrup helps to bind the bars together. It's a quick and easy recipe and I love the results. It's great to have fresh granola bars around the house. They make a lovely snack or breakfast.
Preheat oven to 350 degrees.
Mix together and stir brown rice syrup, honey, sugar, coconut oil, and vanilla extract. Mix in oats and then add chopped dates, figs, raisins, nuts or seeds.
Grease or place parchment paper on the bottom of a 9X9 inch baking pan. Place mixture in the baking pan and press down firmly until the oats are packed well into the pan.
Bake for 20 minutes at 350 degrees.
Let fully cool and then cut into granola bars.
