Weeknight Gyros

Description

A gyro easy enough to make for a weeknight.

Ingredients

1 lb
cooked lamb meat
4  
gluten-free pitas (defrosted)
2  
tomatoes (chopped)
1  
cucumber (sliced)
1⁄2  
red onion (chopped)
1 c
yogurt
1⁄4 t
salt
1⁄4 t
thyme
1⁄4 t
oregano

Instructions

Make the Yogurt Sauce

In a small bowl combine, yogurt, salt, oregano, and parsley. Set aside.

Warm the pitas in the microwave. Cut gluten-free pitas in half and stuff the yogurt mix, lamb, tomatoes, cucumbers, and red onion in the pita.

Notes

I found the gluten-free pitas in the freezer sections at my local Safeway store.
