Crockpot Leg of Lamb

This is a nice gluten-free alternative for Easter as it is often hard to determine if a baked ham is gluten-free. Cooking it in the crock-pot allows time for Church and Easter egg hunts during the day.


leg of lamb
1 T
rosemary (finely chopped)
1 T
mint (finely chopped)
salt and pepper (as desired)


Create a rub using finely chopped rosemary and mint and add salt and pepper. Rub the meat with the mixture and place in the crock pot. Add 1/2 cup of water and set crock-pot on low for 6 1/2 hours. Turn once during the half-way point. Serve with mint jelly when finished cooking.
