A quick Mexican inspired meal that is traditionally served at breakfast, but makes a great quick dinner too.
Heat a frying pan on medium high. Add olive
oil and then garlic for a minute or two. Then
sauté onion, jalapeño and pepper until tender.
Next add tortillas and sauté until crispy. Next
add the eggs and scramble them with everything
in the pan. When the eggs are cooked
add cheese on top of the mixture in the pan
and heat until melted. Split into servings and
place on plates. Top with tomatoes, avocado
and lime juice.
