Classic Baba Ghanoush recipe.
Preheat oven to 400 degrees.
Poke holes in the eggplant, place the eggplant in a baking dish, and bake for 40 minutes. Place in water to cool and peel skin off.
In a food processor combine eggplant, tahini, lemon juice, garlic, cumin, and salt and pepper. Puree until smooth. Place eggplant mixture in a bowl and slowly mix in oil
Sometimes I use 1/4 cup hummus in place of the traditional tahini.
