Potato Salad

Description

Quick and easy potato salad recipe.

Ingredients

large russet potatoes (peeled and quartered)
1⁄4 c
mayonnaise
1⁄4 t
ground red pepper (optional)
1 T
lemon juice
4  
green onions (chopped)
1 t
mustard
1⁄4 t
salt
1⁄4 t
pepper

Instructions

Place peeled and quartered potatoes into a large pot of water, and boil until cooked for about 20 minutes. Take out of water, dry and let cool. Cut into smaller bite-sized pieces and place in a medium-sized bowl. Add in chopped green onions. Mix in mayonnaise, lemon juice, mustard, salt and pepper. Add ground red pepper if desired. Mix and serve.
