Baked Fried Chicken

Description

Baked Fried Chicken. Kind of like KFC but without the wheat flour and without a lot of the fat.

Ingredients

1 cn
cooking spray
1 c
low-fat plain yogurt
2  
egg whites, beaten (large! )
1 c
gluten-free flour mix of your choice
1⁄3 c
cornmeal
1 t
paprika
1 t
dried parsley
1 t
salt, divided
3⁄4 t
freshly ground black pepper
1⁄4 t
ground red pepper
1  
chicken (skinned and cut into parts)
2 T
canola oil

Instructions

Cover a large baking sheet with parchment paper. Combine yogurt and egg whites in a shallow dish. Using a fork or whisk mix well. In a separate shallow dish, mix together flour, cornmeal, 1/2 teaspoon salt, paprika, black pepper, and red pepper. Sprinkle chicken evenly with remaining 1/2 teaspoon salt. Dip the chicken in the yogurt mixture and then cover with the flour mixture.
In a frying pan heat oil on medium-high heat and add the covered chicken. Cook until brown, a few minutes on each side. Finish the chicken by baking at 425° for 30 minutes or until chicken is done.

Notes

The butcher at my grocery store splits the chicken into parts when I ask. It makes the preparation so much easier.
