Chicken Mole imported from Recipe Import
Preheat oven to 350 degrees.
Over medium heat, add olive oil and onion and saute until tender. Add garlic, chili powder, cumin, and cinnamon and cook for a few minutes. Add tomatoes, peppers, chipotles, chicken broth, peanut butter, orange juice, and chocolate. Simmer for 10 minutes. Put the sauce in a blender or a food processor and blend the mixture until it's smooth.
Brown the chicken on both sides for a few minutes in a pan over medium-high heat. Then place the chicken in a casserole dish covered with mole sauce. Bake for 1 hour.
