Roasted Fingerling Potatoes

Description

Simple finger potatoes that can be served with your fanciest meal.

Ingredients

1 lb
fingerling potatoes
1 T
olive oil
1 T
fresh rosemary (chopped finely)
1 T
fresh parsley (chopped finely)
1⁄4 t
salt

Instructions

Notes

1) Preheat oven to 425.
2) Chop finger potatoes in half or quarters depending on how big they are.
3) Place the potatoes in a medium sized bowl. Combine olive and salt.  Then add fresh rosemary and parsley.
4) Bake in the oven for 20 minutes.
