Description

Spanish Rice.  A great side for fajitas.

Ingredients

2 T
olive oil
1⁄2  
onion (finely chopped)
1 clv
garlic (minced)
1 c
white rice
2 c
chicken stock
2  
tomatoes (small, diced)
  ds
oregano
  ds
salt

Instructions

Cook rice in chicken stock in a rice cooker or pot.  In a separate pan, heat oil add garlic and cook for a minute or two, then cook the onions until soft.  Add the oregano and salt.  Then add tomatoes and finally add the cooked rice.  Cook for 20 minutes until the liquid is absorbed and serve.
