Shredded Chicken Week

This week's gluten-free menu:

Sunday - Baked Chicken Taquitos, Salsa and Quacamole
Monday - Gluten-Free Spaghetti and Meatballs and  Green Beans
Tuesday - Fajita Bowls
Wednesday - Lentil Soup and GF BLTA Sandwich
Thursday - Chicken Quiche and Fruit Salad
Friday - Ham and Beans in the Crock Pot, Corn Bread

Here's a week that has a few meals inspired by different uses of shredded chicken.  It's easy to prepare at the beginning of the week and it can be thrown in all sorts of dishes.  I love this baked taquitos recipe.  I've been trying to find a gluten-free version of taquitos at the store because it's such a kid-friendly food.  I have found corn taquitos in the grocer's freezer that seemed gluten-free but I was horrified to find that there were ingredients I'd rather not have my family eat such as MSG.  I'm happy to serve this alternative to my family.
