Picnic Week

This week's gluten-free menu:
Sunday - Chicken Marsala
Monday - Jumbalaya
Tuesday - Salmon, Greek Salad, Banana Muffins
Wednesday - California Wrap
Thursday - "Fried" Chicken, Green Beans, Fingerling Potatoes
Friday - Chicken Rice Soup, Fruit and Cheese Plate, Green Salad
I love picnics and so does my family. Somehow whenever it's time to pack a picnic my mind draws a blank. A turkey or ham sandwich on some gluten-free bread will work and that's what we do a lot of the time but I always feel a little let down when I haven't come up with something more interesting. I've been brainstorming about gluten-free picnic ideas. Here is my list so far :
Cold Pasta - Gluten-free pasta salads are a good solution for picnics.
Sandwiches and Wraps - Chicken Salad Sandwiches, Grilled Chicken Pesto, and BLT Sandwiches are all ways to put a little excitement into your gluten-free sandwich. You could also try a Veggie Wrap or California Wrap.
Cold Meats - Baked Fried Chicken tastes so yummy that you don't have to heat it up for it to be enjoyable. Pâtés would work well on some gluten-free crackers or corn tortillas.
Muffins or Biscuits - Prepare ahead and throw some drop biscuits or banana muffins in the basket or cooler.
Fruit and Cheese - Pick up some tasty cheeses and fresh fruit. Apples and goat cheese is one of my favorite combinations.
Cookies - After everyone's had their protein and greens it's time for dessert! Cookies are an easy solution on picnics. You can eat them with your hands so no need to bring extra plates or forks for dessert. I'm going to suggest something that isn't chocolate due to the summer heat. Maybe an oatmeal cookie?
Now that I've taken some time to think about it hopefully I'll have some ideas for my next gluten-free summer outing.

Mom's Plan - Gluten-Free and Dairy-Free
Melissa at Mom's Plan is still getting through her freezer food before the big move. Her menu this week includes Tuna Noodle Casserole, Spanish Rice with Sausage, and Crockpot Italian Turkey Breasts.
The Peaceful Mom - Gluten-Free
Kendra at The Peaceful Mom has several easy gluten-free meals on her menu this week. Her menu includes Delicious Steak Fajitas (served with corn tortillas), Potato Kielbasa Skillet, and BBQ Chicken and Black Bean Tostadas.
Celiac Family - Gluten-Free
Heather at Celiac Family has her weekly menu up and she has provided yummy Meringue and Sugar Cookie recipes that would work well for picnics. She has also suggests bringing salads on picnics if you have access to a cooler such as Greek Pasta Salad with Chicken and Berry Fruit Salad with a Balsamic Glaze. Her menu this week includes Pulled Pork Sandwiches, Salmon with Lemon & Dill, and Seven Layer Salad.
