Description

Alternative to batter fried catfish

Ingredients

1 1⁄2 c
pecans (chopped finely)
1  
egg
4  
catfish fillets (about 1 lb)
1 T
butter (divided)
2 T
water
   
salt and pepper

Instructions

Preheat oven to 425 degrees.

Chop pecans finely in a food processor or by hand. Place pecans on a large plate.

Whisk egg and water and place in another shallow dish.

Melt butter in the microwave.

Salt and pepper fish on both sides. Dip fish in egg mixture and then coat with pecans pressing to make sure the pecans stick.

Place fish on a non-stick silpat. Dollop butter on top of top of each fish.

Bake for about 15 minutes.
