Minestrone Soup imported from Recipe Import
In a large pot, combine broth, tomatoes, beans, carrots, celery, onion, thyme, sage, bay leaves, and 1/2 teaspoon each salt and black pepper. Let simmer for 20 minutes, then add pasta, zucchini and spinach and cook for 15 more minutes. Take out the bay leaves, sprinkle with Parmesan cheese and serve.
