Minestrone Soup imported from Recipe Import
Ingredients
3 c
chicken broth 1 cn
(28-ounce) diced tomatoes 1 cn
(15-ounce) white (cannellini or navy) beans, drained 2
carrots (peeled and chopped) 1
celery stalk (chopped) 1 t
dried thyme 1⁄2 t
dried sage 2
bay leaves 2 c
gluten-free elbow pasta 1
zucchini (chopped) 1⁄2 c
frozen spinach ( defrosted) 4 T
grated Parmesan cheese 1⁄2 lb
italian sausage (optional)Instructions
In a large pot, combine broth, tomatoes, beans, carrots, celery, onion, thyme, sage, bay leaves, and 1/2 teaspoon each salt and black pepper. Let simmer for 20 minutes, then add pasta, zucchini and spinach and cook for 15 more minutes. Take out the bay leaves, sprinkle with Parmesan cheese and serve.
