Description
Salmon Salad with a Mediterranean twist.
Ingredients
8 oz
Salmon Filet 1
red pepper 3
green onions (chopped) 1⁄4 c
Kalamata olives 2 c
spinach (chopped) 4 oz
feta cheese (crumbled) 1
lemon (juiced) 1⁄2 t
oregano 1⁄2 c
quinoa 1 c
water or chicken brothInstructions
Salt and pepper the salmon. Add oregano and brush olive oil to coat the top. Cook the salmon in the oven for 15 minutes at 400 degrees.
Cook the quinoa in 1 cup of water or chicken broth for 15 minutes.
In a large bowl, combine spinach, kalamata olives, feta cheese, diced red pepper, and green onion.
Take the salmon out and let cool. Break into pieces and add to the salad. Combine the quinoa into the salad.
Squeeze lemon juice over the salad and serve.
