Maple Week

This week's gluten-free menu:
Sunday - Pork Ribs, Maple Baked Beans, Corn on the Cobb, Broccoli
Monday - Simple Weeknight Chicken, Brussels Sprouts, GF Maple Biscuits
Tuesday - Rainbow Trout, Maple Carrots, Brown Rice
Wednesday - Chicken Kebobs, Greek Salad, Basmati Rice
Thursday - Bean Burritos
Friday - GF Pepperoni Pizza, Green Salad

This week the theme at the Gluten-free Menu Swap hosted by GF Goodness is Maple. What a delicious idea! While I was planning the week I learned a thing or two about Maple Syrup. First of all the consensus is to use real Maple Syrup. I already agreed with this. After using real maple syrup I got cheap one week and bought the mainstream knock-offs figuring it was what we had growing up so it must be fine. It really wasn't okay. I couldn't go back after having the real thing for so long. What I didn't know is that Grade B maple syrup actually has more flavor for cooking and baking. I will definitely try this. The Grade A is so expensive so I am all for trying out the less expensive more flavorful kind. Can't wait to try the Maple recipes this week and I may even try some baking with it.

On Sunday we're having Pork Ribs and Maple Baked Beans. I figured that the ribs might go well with the beans. My family will be excited because we rarely have ribs. It will be a treat. On Monday we're having Simple Weeknight Chicken. This is so easy. I just slice the chicken breasts in half lengthwise to make thinner cuts and then add salt, pepper and poultry seasoning and saute them in a little olive oil. A great no-stress meal for a Monday night. On Tuesday we'll have trout. I try to get fish on the menu once a week. Fish is a great weeknight meal because it's so healthy and pretty quick and easy to cook too. Wednesday is a Greek themed night with Chicken Kebobs. Thursday we'll have bean burritos. I'm going to make my own re-fried beans with some of the beans I froze from my bean frenzy I had a couple of weeks ago. And Friday we'll try to relax with GF Pizza. I try to get nitrate-free pepperoni which is kind of a pain because they don't always have it at the regular grocery store but it's worth the peace of mind. It's easy enough to stop off at Sprouts during the week to get it since pizza night is not until Friday.
