Jicama Week

This week's gluten-free menu:

Sunday - Baked Fried Chicken, Cauliflower Mashed Potatoes ,
Jicima Watermelon Salad
Monday - Tostadas
Tuesday - Beef Stir Fry
Wednesday - Cobb Salad, Corn Muffins
Thursday - Turkey Burgers, Sweet Potato Wedges, Green Salad
Friday - GF Pizza, Jicama Salad

I'm fairly new to Jicama, but I am enjoying experimenting with it. It has a nice sweet flavor and a crunchy texture when used fresh which makes it great for salads. I have used it in the Jicama Watermelon Salad which I have on the menu this week and also I have another salad on the menu that includes oranges, jicama and avocado. Another way I'm going to use it is in stir fry. Why not? It adds crunch like water chestnuts or peanuts would to a stir fry and I think its sweet flavor might work well with beef. It's worth a try!
