Description
Baked gluten-free fish sticks
Ingredients
1 lb
white fish (such as cod, snapper or tilapia) 1⁄2 c
corn meal 1⁄2 c
all purpose gluten-free flour 1⁄4 t
salt 1⁄4 c
olive oil 1 t
seafood seasoning 2
eggsInstructions
Preheat oven to 450 degrees.
Rinse fish fillets in cold water and set on a plate
Cut fish into strips removing any bones.
Toss the flour, corn meal, seasoning, salt and oil into a shallow bowl.
In a second shallow bowl, beat the eggs with 1 tablespoon water.
Dip the fish into the beaten eggs, and then roll the fish stick into the cornmeal mixture.
Place the breaded fish stick on a baking sheet covered with a silpat or parchment paper.
Bake the fish sticks until crisp and opaque throughout for about 12 to 15 minutes.
