Chili Week

This week's Gluten Free Menu:

Sunday - Chili, Corn Muffins
Monday - Chili Taco Salad
Tuesday - Chef Salad
Wednesday - Spinach Pancakes and Turkey Sausage
Thursday - Thai Chicken Curry
Friday - Chili Nachos

This week is Chili week.  Chili is versatile and great for cold weather.  If you can, make enough corn muffins to last throughout the week, but in my experience they don't last very long!  Chef Salad is always a quick and healthful option.  On Wednesday I'm going to try something new.  It's try something new week in the Gluten-free Menu Swap and I'm going to try a gluten-free version of Spinach Pancakes and serve them with Turkey Sausage. This was a favorite of mine that I used to get in Venice, CA at the Firehouse which is famous for body builder meals.  (I am not a body builder but used to work next to the famous Gold's Gym where there are many.)    For Thursday, we are having Thai Chicken Curry which is one of my favorite dishes.  I have found red curry paste hard to find, but Thai Kitchen makes a great one and it says gluten-free on the label.  For our fun Friday meal we are having Chili nachos!  I'm going to freeze some of the chili that I made on Sunday and use it for the nachos on Friday.
