Chicken and Spinach Quesadillas

Description

Chicken and Spinach Quesadillas

Ingredients

16  
corn tortillas
1⁄2 lb
chicken (diced)
1⁄2  
yellow onion
1 pt
mushrooms
2 c
spinach
1 T
chicken broth
3 T
canola oil
2 c
shredded Mexican cheese

Instructions

In a frying pan, saute garlic in oil until fragrant. Salt and pepper chicken. Then add the chicken to the pan for a few minutes until cooked. Add onion, and mushrooms and saute until tender. Finally add the spinach and chicken broth and cook until it is wilted. Take the mixture out of the pan and place it on a plate.

Place the mixture on the tortillas, add some cheese, and then add another tortilla on top of the mixture.

Wipe out the frying pan and add more oil. For each tortilla cook until brown on the first side and then flip and cook until brown and the cheese is melted on the second side. Cut into sections and serve.
