Baked Chicken Taquitos

Description

A baked taquitos recipe that is kid-friendly, healthful and lots of fun!

Ingredients

3 c
shredded chicken
1 c
shredded mexican blend cheese
3 T
olive oil
1 c
diced onion
2 clv
garlic
1⁄4 c
lime juice
1 1⁄2 t
cumin
1 1⁄2 t
paprika
1⁄2 t
salt
1⁄4 t
pepper (freshly ground)
1 1⁄2 c
chicken broth

Instructions

Preheat oven to 425.On the stove, heat olive oil over medium heat.  Add onion and cook until it's tender.  Then add minced garlic and cook for a few minutes until it's fragrant.

Next, add lime juice, cumin, paprika, salt and pepper to the pan.  Stir the chicken into the spice mixture, tossing to combine. 

Simmer the chicken broth in a pot over the stove or warm the broth in a low bowl in the microwave.  Dip a corn tortilla into the chicken broth so that it is easy to bend.  Transfer the tortilla to your work surface and fill about 3 tablespoons of the chicken mixture into the tortilla.  Sprinkle a bit of the low-fat cheese into the tortilla and roll.  Place in a greased casserole dish.  Repeat the process with the remaining tortillas.Bake for 15 minutes until the edges are brown and crispy.

Notes

Serve with homemade guacamole and homemade salsa.
